Cupcakes!!

Below are the cupcakes that I have made for parties. Cupcakes are a great alternative to cake because they are easy to serve, come in portion controlled sizes, and can be made in a variety of flavors. Plus, they are just cute!!

These are some Halloween cupcakes that I made for a Halloween Party. The hats below are made out of fondant and are on top of a white cake with buttercream icing.

Below are chocolate cupcakes with a peanut butter cream cheese icing and a Reese's Cup on top.

This variety of cupcakes was for a party that my sister threw. They are (left to right) cookies and cream, peanut butter cup, mint chocolate chip, Boston Cream Cake, and chocolate covered strawberry.

Yes, these are cupcakes!! These "cupcake bouquets" look adorable in flower pots! For my friend, Amber's Housewarming party, I made her a few cupcake bouquets. Then, she used the flower pots in her garden. They look like real roses and can be made with any cake flavor.

More Cakes!

Abby's 4th birthday party was a "princess tea party." This included Abby telling everyone that they had to dress up and drink tea from her tea cups. However, the "tea" the girls had was 90% sugar cubes, 10% tea! :) It was a cute party outside with this delicious cake. The grass, flowers, and table cloth were all made from fondant. Then, we just put a tea set on top.

This birthday cake was made for a 30th birthday party. The Maker's Mark bottle is a shaped cake with two layers and a chocolate ganache filling. The outside is covered in fondant and then painted to look like the bottle.

This two tier cake was designed for little Sophie's Tinkerbell party. Her grandmother gave me the figurines to work into the cake, but the rest of the cake is completely edible. The cake is covered in a buttercream frosting and decorated with fondant daisies. The bright colors made this cake fun to make!

My Cakes So Far

Here are some of the cakes that I have made for various events. Since this is my first posting showing cakes, there are going to be several ranging from when I first started to now. Check them out! :)

This cake is a three layer chocolate cake with a chocolate ganache filling with butter cream icing. The flowers and the bow are all edible and made from fondant. It was for a bridal shower and the bride's colors were black and lime green.

This cake was also for a bridal shower. The cake is three layer red velvet with cream cheese icing It was then topped with chocolate covered strawberries. It was a huge hit a the shower and everyone loved the extra treat of the strawberries on top!

My sister and I made this cake just for fun! While at the lake, we decided to make this cake designed around the adorable watermelon sucker that is on top. The bottom layer looks like a watermelon, the next layer is a fondant "table cloth" that we made by painting the pattern on the fondant and the cake is topped with two mischievous ants made from fondant. The entire cake is edible including the topper.

This was my daughter's third birthday cake. The cake was a white cake with buttercream icing. The three is the second tier of the cake. Abby sure loved digging into that bright pink icing!

This cake was made for a couple that worked and met at Jim Beam Distillery in Clermont, Kentucky. Each of the cakes are two layer with a white cake and chocolate ganache filling. The cakes were covered in buttercream icing and decorated. The supports are bottles of Jim Beam with Jim Beam toppers.

This wedding cake is three tiers with a chocolate, white and strawberry layer. Cascading down the side of the cake are fondant roses.

These miniature chocolate brownie bites are filled with cream cheese icing. They are delicious and make a great accent for wedding cakes.

Above are sugar cookies with the monogram of the newly married couple. These are moist sugar cookies covered with royal icing. I can also do these and wrap them in individual bags for shower favors.

These cookies and the cake below were made for a wedding shower. The bride's colors were pink and lime green. The cookies are sugar cookies covered in colored royal icing. The cake is a two tier chocolate cake with a chocolate ganache filling. The cake was then decorated with fondant icing over another layer of buttercream icing. The cake is then covered with polka dots and shimmer powder.

This cake was made for a first birthday party. Julia, Eli's mom, has been a friend of mine since elementary school. She and her family have always been huge supporters of my goal of making my business a success. This cake was made for her son's first birthday. His nursery was decorated in a sporting theme, so we extended this to his birthday cake. The entire cake is edible. The cake is a two layer chocolate cake with a buttercream filling. The baseball and basketball were made out of rice crispy treats and then covered in fondant. The stars were also made of fondant.

I made this cake for my mom's birthday. It is a three layer white cake with a chocolate ganache filling. It is decorated in Mom's favorite color, mint green, and with fondant flowers decorating the top and sides.

Our State Fair Winner!!
My sister and I completed this cake for the Kentucky State Fair Cake Competition. The theme was "Stars of the State Fair." We thought about what we thought the stars of the fair were and then made these items out of fondant. We made State Fair Icon, Freddy Farm Bureau, a pig to represent the livestock, a slide with a girl sliding down to represent the Midway, and a quilt for the crafting exhibits. We ended up winning 3rd place!

This cake was another cake made for a wedding shower. It is a two layer cake with a fondant covering. On top, there are fondant roses.

This cake was made for a dear friend of mine at her wedding. Jackie and I have been friends for many years, and she has been a wonderful and supportive friend to me. Jackie's wedding cake was a three tier cake with three different flavors of cake. It is decorated with buttercream icing with scroll work on the sides and Gerber daisies.

This birthday cake was done for a "Redneck Woman!" She told me the characteristics that she wanted in her cake and I designed it for her. She was turning 18 years old and wanted something that reflected her personality. She loved the design!

This is a cake that was designed for Jay who was turning 80 years old. Jay loves his garden, so his family wanted to show this on his cake. The entire cake was edible, including the garden. I made the soil out of cookie crumbs and the vegetables were made from various candies. Jay and his family loved the cake!

This cake was made for a wedding reception. The couple had been married at the beach, but they had a celebration at home with their families. They wanted to have a sandcastle wedding cake to celebrate their beach wedding. The entire cake was edible including the seashells made out of chocolate. The turret was made of an ice cream cone and the outside was covered in brown sugar as the sand.

This cake was made for a 12th birthday party. The cake was a marble cake with chocolate and white cake to accent the zebra print outside. The cake was then covered in buttercream with fondant.

This cake was made for my friend, Jackie's wedding shower. It was a Hawaiian theme. The cake is a yellow cake on the bottom layer and a chocolate cake on top. The cake was covered in fondant and decorated with orchids and a picture of Jackie and her fiancee.

One Mom's Dream

MeMi and Company began with a dream that started in my kitchen. As a single mom, my time is split between the needs of my family and my full time job.  After my second wonderful child, Abby, was born, I began to bake cakes with my aunt when I went to pick Abby up on my way home. It was then that my Aunt Carolyn began training me in cake decorating. It became a new hobby that I enjoyed so much that I am now trying to  turn this into a career so that I can spend more time with my children.

I have been cooking ever since I was a child. I remember baking with my mom and cooking dinner with my dad. My mom made our birthday cakes each year whether it was a dinosaur for my brother, a Barbie for my sister, or a teddy bear for me. In our family, we ate every meal together and our kitchen table was a place that tears were shed, hurt feelings were healed, and laughter was abundant. Now, I have my own kitchen table to share with my son, Gage and my daughter, Abby. Through Memi and Company, I want to share the love that has been shared in my kitchen with you.

Please check my blog often to see what new cakes and cupcakes I have made.
